Vegetable Tortilla Pie

Ingredients

1can Corn
1cup Baby Spinach, torn into medium sized pieces
1box White Mushrooms, Stems Removed and Chopped Up
1package Tortilla Wraps
1dash salt, pepper, garlic
2tablespoons oil for sauteeing
1.5cups Muenster Cheese and Cheddar Cheese, Mixed

Instructions

 

Grease a round pan. Saute' Corn, Spinach and White Mushrooms till nice and soft. Add salt, pepper and garlic powder  in last few minutes. Lay out one wrap in the pan and press it down so that the center is laying flat and the outer edges curl up about 1/2 inch. Then put about 3 tablespoons of cheese all over the wrap laying in the pan. Add about 2 tablespoons of sauteed veggie mixture. Cover with a second wrap and press it down over the layer of cheese and veggies making sure that the outer edges curl up just a little. Keep layering as high as you'd like with veggies, cheese and wraps. When you get to the last layer, spread cheese over the top. Push down all the curled up edges that are sticking out over top of the top layer where you spread the cheese. Then bake on 400 for 30 minutes or until top is browned. Cut into pie style slices and serve warm.
 
This recipe is so easy and tastes really good. Don't like those specific vegetables? You can put whatever types of veg. you like. Lots of side dishes can easily go alongside it too!
