Thai-Style Cucumber Mint Salad

Ingredients
- 1large cucumber or 4 to 5 Kirby cucumbers, skin on and thinly sliced
- 1/2medium red onion, thinly sliced
- 1/2cup chopped fresh mint
- 1/4cup chopped fresh basil
- 1/4cup chopped cilantro
- 1tablespoon peanut oil
- 2tablespoons rice vinegar
- 1tablespoon sugar
- 1tablespoon soy sauce
- 1teaspoon Thai red chili paste
- 1/4cup chopped peanuts
Instructions
