Ingredients
- 5tablespoons oyster sauce
- 2 1/2tablespoons soy sauce
- 4cloves garlic, chopped
- 1tablespoon cilantro
- 1teaspoon ground black pepper
- 4 sea bass filets
- 3stalks lemongrass, roughly chopped and crushed
- 1tablespoon dill, roughly chopped
- 8 Banana or Lotus leaves, cut into 10x12 inch pieces
- Dipping Sauce
- 1/2cup lime juice
- 1/2cup soy sauce
- 3 1/2tablespoons honey
- 3 thai green and red chiles
- 3cloves garlic
- 1tablespoon cilantro

Instructions
- To prepare the marinade, combine the oyster sauce, soy sauce, garlic, coriander, ground black pepper and mix well.
- Place the sea bass in the marinade along with lemongrass and dill. Leave in the fridge for 10 minutes.
- Wrap marinated fish in banana leaves, fasten and bake in the oven at 420 degrees for 15 minutes or grill for 15 minutes on each side.
- Prepare dipping sauce by blending all of the ingredients in a food processor until smooth. Use to taste.
