Sweet Sausage Fusilli

2tablespoons extra virgin olive oil, divided
12ounces sweet Italian sausage, sliced into 1/2-inch thick half moons
1 1/2teaspoons chopped oregano
Kosher salt
Crushed red pepper flakes
1quart broccoli florets, blanched
1cup California Black Ripe Olives
1quart cooked fusilli pasta
1/4cup shaved Parmesan cheese


  1. Heat 1 tablespoon olive oil in a large sauté pan over medium-high heat. Stir in sausage and oregano, and season to taste with salt and pepper flakes. Cook for 3-5 minutes until browned. Mix in broccoli, olives and pasta and cook until heated through. Toss with remaining olive oil and top with Parmesan cheese just before serving.
