Spicy Summer Gazpacho

  • Yield: 4 to 6 servings


3-- Ripe Tomatoes
1-- Cucumber, seeded but not peeled
1-- Red Bell Pepper
1-- Green Bell Pepper
1-- Jalapeno Pepper, seeded
1/2-- Sweet Onion
3-- Garlic Cloves
3cups Spicy V8 Juice
1/4cup Olive Oil
1/4cup Red Wine Vinegar
1/2tablespoon Salt
1teaspoon Pepper
1dash Hot Sauce


Roughly chop the tomatoes, cucumbers, peppers, and onion into 1-inch cubes. Put each vegetable separately into a food processor or blender fitted with a steel blade and pulse until it is coarsely chopped.

 After each vegetable is processed, combine them in a large bowl and add the garlic, V8 juice, vinegar, olive oil, salt, and pepper. Add hot sauce to taste. Mix well and chill before serving.

Optional: Garnish with sour cream, and/or fresh basil.
