Red and Green Rice

3tablespoons olive oil
3/4cup thinly sliced green onions
1cup uncooked white rice
3/4cup finely chopped green bell pepper
3/4cup finely chopped red bell pepper
1/4cup minced parsley
2cups chicken stock or broth
1/2teaspoon salt
1/4teaspoon black pepper
2 to 3tablespoons almond chips or slivers


  1. Preheat oven to 350F.
  2. Heat oil in a large sauté pan. Add onion and sauté until soft but not browned. Add remaining ingredient and stir to combine.
  3. Pour into a 2-quart baking dish with a lid. Bake 30 minutes, or until the rice is tender. Toss lightly with a fork before serving.
