Raw Cauliflower Couscous

Ingredients
- 1head cauliflower
- 1bunch parsley
- 1bunch cilantro
- 1tablespoon fresh mint
- 1/3cup sun-dried tomatoes
- 10-- kalamata olives
- 1-1/2teaspoon black pepper
- 1/4teaspoon himalayan sea salt (opt)
- 1 to 2tablespoons olive oil
Instructions
- Food process cauliflower until fine, like couscous. Spoon into large bowl.
- Food process cilantro, parsley, mint, tomato and olives.
- Stir ingredients together with a wooden spoon, fold in pepper and olive oil to taste. Chill; serve chilled or at room temperature.
