Raw Cauliflower Couscous

1head cauliflower
1bunch parsley
1bunch cilantro
1tablespoon fresh mint
1/3cup sun-dried tomatoes
10-- kalamata olives
1-1/2teaspoon black pepper
1/4teaspoon himalayan sea salt (opt)
1 to 2tablespoons olive oil


  1. Food process cauliflower until fine, like couscous.  Spoon into large bowl.
  2. Food process cilantro, parsley, mint, tomato and olives.
  3. Stir ingredients together with a wooden spoon, fold in pepper and olive oil to taste.  Chill; serve chilled or at room temperature.
