Oatmeal Raisin Popovers

3tablespoons butter
3 eggs
1cup milk
5tablespoons sugar
Pinch salt
2teaspoons vanilla
1cup all-purpose flour
1/2teaspoon cinnamon
1/4cup oats
1/2cup raisins


  1. Preheat oven to 375F.
  2. Divide  butter into  cups of  popover pan. (Or buter 12 cups of a muffin tin.) Place  pan in the oven for 3 to 5 minutes while you are making the batter.
  3.  In medium bowl, beat  eggs with  milk, vanilla and sugar, then whisk in flour, cinnamon and oats. Pour  batter into butter-filled cups, then add a few raisins to each cup. Return to oven for 5 minutes, then reduce the temperature to 350 and continue  baking for another 20 minutes.
  4. Drizzle with favorite syrup. Serve and enjoy!
