Ginger Snap Cookies
Peanut Butter
Chocolate Ice Cream


  1. Spread peanut butter on each cookie.
  2. Add a small scoop of ice cream to the peanut butter on half of the cookies.
  3. Place the remaining cookies on top of each scoop of ice cream to make sandwiches.
  4. Serve immediately or quickly store in the freezer. Allow 10 minutes to defrost if serving from the freezer.
