Easy Breezy Banana Bread

This banana bread is mildly sweet. Excellent with cream cheese and marmalade.


1/3 cup olive oil
1/2cup sugar
2 eggs
1 3/4cups all-purpose flour
1teaspoon baking powder
1/2teaspoon baking soda
1/2teaspoon salt
1teaspoon ground nutmeg
1cup mashed ripe bananas
1cup raisins
1cup chopped pecans


  1. Preheat oven to 350F. Grease an 8 x 4-inch loaf pan.
  2. Combine olive oil and sugar in a mixing bowl; beat until creamy. Beat in eggs. Combine  flour, baking powder, baking soda, salt and nutmeg, then add to creamed mixture alternately with bananas, beating well after each addition. Gently mix in raisins and pecans. Pour into prepared pan.
  3. Bake 50 to 55 minutes, until a toothpick inserted near the center comes out clean. Let stand 10 minutes before removing from pan. Let cool on a wire rack.
