Crunchy Pea Salad

  • Yield: 8 servings


1 10 ounce package frozen peas, thawed
1cup diced celery
1cup cauliflower florets
1/4cup diced green onion
1cup chopped cashews
1/2cup sour cream
1/2 to 1cups ranch dressing
1/2cup crisply cooked and crumbled bacon


  1. Combine peas, celery, cauliflower, onion, cashews, sour cream and dressing in a salad bowl; mix well.  Chill until ready to serve.  Top each serving with crumbled bacon.

Tips from our Test Kitchen: If you prefer softer cauliflower, steam and cool the vegetable before adding it to the mix.  Low-fat yogurt and low-fat ranch dressing can be substituted for the sour cream and ranch dressing if you’re counting calories.
