Crunchy Grated Carrot Salad with Lime (Carottes Rapées)

  • Yield: 6 servings


1 1/2pounds carrots, peeled and shredded
-- Fresh cilantro, chopped
-- Juice of 2 limes
2 to 3tablespoons sugar
1pinch sea salt
1pinch cumin
1pinch cayenne pepper


  1. Put  carrots in a super-big bowl and add everything else, tasting as you go.  Serve right away.
