Chocolate Whoopie Pies

7cups all-purpose flour
1/2teaspoon salt
2 1/2teaspoons baking powder
1 1/2cups cocoa powder
4teaspoons espresso powder
1cup hot coffee
1cup hot water
4cups brown sugar
1 1/2cups canola oil
2 eggs
1cup buttermilk


  1. Preheat oven to 350F.
  2. Whisk together flour, salt, baking powder, baking soda, and set aside. In a separate bowl mix the cocoa powder, hot coffee, and hot water. Combine the brown sugar and oil and mix into the coffee mixture.
  3. Combine the eggs, vanilla and buttermilk and whisk into coffee mixture. Fold the dry mixture into the wet mixture and combine.
  4. Using a cookie or ice cream scoop, place drops of dough 1-inch apart on a parchment or silicone mat-lined cookie sheet. Bake 10-15 minutes until whoopie pies’ centers spring back when pressed.
  5. Meanwhile prepare your choice of marshmallow filling, mint marshmallow filling, champagne filling or cream cheese filling. Once whoopee pies have finished baking and have been allowed to cool, spread or pipe onto one side of the whoopie pie and top with another to assemble.
