Chocolate Salami

  • Yield: 8-10 pieces


1.75cups grated semi-sweet chocolate
2cups Maria cookies all crumbled up (if you cannot find those cookies it works if you use Animal crackers)
1.75cups granulated sugar
8tablespoons unsalted butter at room temperature
4-- large egg yolks (as the eggs will not be cooked, make sure to use the freshest eggs you can find. Look for local farmers who sell their eggs or if you are lucky a neighbor that has chickens!)
extra-- butter to spread on the parchment paper



  1. In a large bowl add the chocolate and the sugar and mix them well
  2. Add the butter in small pieces and stir
  3. Add the cookies then the egg yolks then knead it all together well with your hands to form a tight paste
  4. Spread a sheet of parchment paper and grease it with some butter
  5. Place the paste on top of the parchment paper and roll it tightly as it creating a salami and with flat ends then roll the parchment paper all around it tightly
  6. Place it in the fridge overnight or at least 5 hours
  7. Remove it from the fridge and cut slices and serve
