Candied Walnuts with Sprimp in Spicy Garlic Sauce

Ingredients

Spicy Garlic Marinade:
3large garlic cloves, minced
1/4teaspoon crushed red pepper (or to taste)
1tablespoon olive oil
1tablespoon lemon juice
1teaspoon salt
Shrimp:
1pound medium raw shrimp, shelled and deveined
3tablespoons extra-virgin olive oil
2medium bell peppers, any color, juilienned
1small white onion, halved lengthwise and thinly sliced
1teaspoon salt
1/4teaspoon crushed red pepper (or to taste)
1/2cup candied walnuts, to garnish

Instructions

  1. Combine marinade ingredients in a large bowl. Add shrimp and toss to coat. Cover and refrigerate at least 30 minutes.
  2. Heat a nonstick wok or saute pan over high heat and coat with 2 tablespoons oil. Add shrimp, reserving marinade. Saute until shrimp turms pink, about 2 minutes. Remove and place in a bowl.
  3. Recoat wok with remaining 1 tablespoon oil. Add peppers, onion, salt, red pepper and reserved shirmp marinade. Saute until peppers soften, about 1 minute. Return shrimp to wok, stir, and heat through. Garnish with candied walnuts. Serve hot with rice or pasta.
