7-Layer Casserole

1cup Instant Brown Rice (uncooked)
1cup whole kernel corn (uncooked)
2dashes salt & pepper
2cans 8-oz. ea. Tomato Sauce
1/2cup Onion - Diced
1/2cup Bell Pepper - Diced
1pound Ground Beef - (uncooked)
2slices Bacon - uncooked (optional)


Pre-heat Oven to 375.  In a 1 to 2-Quart Casserole dish.  Layer ingredients as listed . Beginning with 1 c. Instant Brown Rice, 1-can or Cup Corn, Salt & Pepper, 1 small can Tomato Sauce with 1/3 to 1/2 can water, Add Onions and Bell Pepper, place Ground Beef on top, then add the second small can Tomato Sauce with another 1/2 can Water. (optional- add uncooked bacon to top, I don't just to cut calories) COVER and Cook 1-Hour, Un-Cover then cook another 30 minutes.  Enjoy… my Grandma & Mom used to make this.  Pair this with a nice Green Salad. This is a Very Good Easy Quick Meal…in one dish…
