The late, arguably great, Janis Joplin wailed and warned us to "get it while you can"—a sort of "gather ye rosebuds while ye may" with a rock and roll bass line and a bluesy bent. And are we ever taking those lyrics to heart this Labor Day.

Before summer's last song is sung, we intend to get our grill on while we still can, and we mean to travel the road less traveled. Along with the usual rank and file—burgers, steak, chicken, fish and ribs—we're gonna make our grills sing with a few unexpected dishes. Here are 3 of them—plus a line-up of the usual delicious suspects.

Pizza: Grill the crust on a pizza stone, add desired toppings and grill a few minutes more, until the cheese melts.

Grilled Cake: Brush cut slices of angel food cake or pound cake with melted butter, grill about 2 minutes on each side, and serve warm with a juicy, fruity compote and a scoop of ice cream.

Melon: Sweet watermelon caramelizes deliciously as it grills—either by the slab or cubed and kebab-ed.
