The challenge: starting with the freshest ingredients and favorite recipes, get rid of some of the fat and calories while maximizing the nutritients.

The chef, perhaps surprisingly, is Gordon Ramsay, celebrity chef of television’s "Hell’s Kitchen, Ramsay’s Kitchen Nightmares" and owner of restaurants from Doha to Los Angeles.

Ramsay was bitten by the fitness bug in 2000 and started running marathons and turned his attention to eating for optimal health. He penned Gordon Ramsay’s Healthy Appetite, originally for a British audience, now published in the United States.
